First Communion a Mexican Fiesta with Emma Pearl Wine

A lot of you know that Saturday was a very special day in my family. Miss J had her first Holy Communion and after the ceremony at the church; we celebrated this special Day with a Mexican Fiesta. What a fabulous way to celebrate with Family and Friends.

A Mexican Fiesta is the way to go when it comes to cooking for a Large crowd, we had 40 for lunch. We had a taco bar with all of the fixings.

plus we served 7 Layer bean dip.

Margarita's both Grapefruit and Traditional

and Emma Pearl wine which is a fabulous light and refreshing chardonay wine with a bouquet of poached pears, caramel, butter-cream and brown baking spices this debut vintage of Emma Pearl Chardonnay features the preferred characteristics of its Central Coast origin. It has a delicious flavor with a full creamy body and crisp finish with lingering notes of Meyer lemons, toasted cinnamon and sweet cloves.

TIP of The Day : The easiest way to do a Taco Bar for a large crowd is let your Market do the work for you with a rotisserie Chicken Remove all Skin and bones. Next chop into bite size pieces.

Next Cook ground beef in large pan adding Taco Seasoning when almost completely cooked.

Serve as the base for Tacos

Serve as Tostadas

Salud and Have a glass of Emma Pearl wine with me and OneFabulousMom

Enjoy

Ash Wednesday

Today is Ash Wednesday to those of you who don't know what it is here is a link explaining the Christian Holiday.  Some of you might know it's suppose to be a day of fasting and for your dinner you are not to eat any meat! Obviously I was not really thinking when I originally put together toady's post for Sweet and Savory Meatballs  together. I forgot it was Ash Wednesday, and being a good Catholic girl I remembered that I had posted a meat dish today.  So I quickly came home after mass and created these suggestions for you if your looking for that Meatless option or Fish meal to serve this evening. Here are a couple of ideas:

Easy Breezy Pasta ( Just do not add the Chicken)

Pizza either Ultimate gluten free  once again do not add any meat to the toppings.

Yamato Soup and Bruschetta Goat Cheese Panini

You could do a variety of Appetizers that's always fun too

I hope you enjoy your dinner tonight after a long day of fasting. I'm Making a pasta dish with Red Gold Tomatoes  that will appear next week for the Iron Chef Challenge.

Bon Appetite and Enjoy

Super Bowl XLV let The party begin

So if your like me you start to think about what to serve at your Supper Bowl party about 2 weeks prior to the actual game day. This Year Super Bowl XLV will be held in Cowboy Stadium in Dallas Texas. What this means to me is a good bowl of Red is in order, that’s Texan talk for Chili, plus a couple extra options for those who are not chili fans. So at my Super Bowl Fiesta I will probably make a lot of finger food including: Home made Chicken tenders, Grilled Peppers and Onions to go with Brett’s Brats and Bacon wrapped Itallian Sausage, Chili, Alfredo Corn on the cob, Fritto Pie, Chicken Ceasar Pasta Salad, Summer in a Bowl, Dates stuffed with Goat Cheese wrapped in Bacon, Baby Dogs wrapped in Bacon, Fig, Apple, Bacon and Onion Glaze served on a bed of Warmed Brie, A spicy Date in a blanket, Hot and Spicy Artichoke Dip, 7 layer Bean Dip ( I will Post on Monday), plus the traditional Chips Salsa and Guacamole. Plus we will have the Tradional Margaritas, Grapefruit Margaritas and Greyhounds at Sunset and Beer. For dessert, Homemade brownies and Cookie Crisp Rice Crispy Treats.

It should be a fun game the Pittsburg Steelers are playing the Greenbay Packers. Christina Aguilera is scheduled to sing National Anthem.

The Black Eyed Peas are playing in the Half Time show.

Here are all of my links to my recipes:

Enjoy!!!
