Bruschetta Goat Cheese Panini's




 
 
Who's ready for the Super Bowl I know I always like to build a Panini Bar with a variety of meats and cheeses and then some sliders with a couple of dips, and then have the guests bring deserts This is one of my  quick and easy, go to recipes, and you will be in and out of the kitchen in 5 min, including clean up!


TIP Of The Day: If you do not own a Panini Press Take a brick and cover with foil and place on top of sandwich. Works the same Way as a Panini Machine. In addition to you can use your George Foreman cooking Machine they are pretty much the same.

1 Sandwich
Bruschetta Goat Cheese Panini’s Ingredients:
Gluten Free French Bread  2 Slices 1/2 inch thick I make the Glutino Mix
2 Tablespoons Goat Cheese
1 Tablespoon Tomato Bruschetta
Butter (Optional)



Take Some Gluten Free French Bread and Cut ½ inch Slices













Next Take goat cheese spread on Gluten Free Bread
Last take Tomato Bruschetta and spread on top of goat cheese.
Optional Butter Outside of Gluten FreeBread
Place in Panini in Panini Machine and cook for about 1-2 min or in Frying Pan on Medium Heat for 1 min each side.

Bruschetta Goat Cheese Sliders

With Super Bowl Sunday coming right around the corner I am always looking for great recipes to serve at my super bowl party and this is a old one but a great one.  I thought to my self what do I have in my freezer that I could make that had the burger feel. However, because I live in the land of La La, I try to watch what I eat. So when I am making burgers, I always try to do sliders. This way I get to eat the guilty pleasure of a burger and it is not supper big. So if I eat one slider with fries or chips I am full.


Tip Of The Day: Before going to the Market Check the sale advertisements
mine comes out On Tuesday Night at Midnight online for my local Ralph's or Vons Markets. I See what is on sale and stock up on my Meat Poultry and Fish and I freeze it. This way when you have that inspiration or are reading a recipe on my website you already have the ingredients available.

Bruschetta Goat Cheese Sliders

Makes 8-10 Sliders


Ingredients:
1 pound Ground Sirloin
½ chopped Red Onion about 1cup finely chopped
1 teaspoon garlic powder
½ teaspoon Salt
½ teaspoon pepper


Filling:

8-10 ½ teaspoons of  Bruschetta spread make sure it's gluten free
8-10 ½ teaspoons of Goat Cheese

1 Bag of Gluten Free Dinner Rolls Sliced Horizontally

Equipment:

Grill, Frying Pan or Grill Pan
Large Bowl for Mixing
Platter or Plate one for patties Cooked one for Raw patties






Mix first 6 Ingredients together in bowl. Next form16-20 thin patties, so you can meld together after placing filling on top. Next sprinkles Bruschetta and goat cheese on top of thin patty.






Then place other patty on top and squish together so you do not see the filling. Next place on grill for 3-5 min a side until desired wellness. When Cooked place on Gluten Free Roll and serve with chips

Gluten Free Chicken Ceasar Pasta Salad

So a couple of years ago when I started Cooking Underwriter I made some great recipes that were not gluten free. However, I feel that now that I live a gluten free lifestyle with my family, it is time to recreate these recipes to be gluten free. So when I am creating a new recipe, the first thing I try to do is to get inspired. I do this in various ways i.e.... watch The Food Network, The Cooking Channel, and I visit my local restaurants in the area; plus I have a full library of cookbooks and Magazines too. This recipe was inspired by a dish that Mr. Fix It ordered at Raz’s Little Italy , West Hills, California. Mr. Fix It, my hubby, ordered Chicken Alfredo and when I saw the colors of his dish it immediately put a vision into my head.  So when the heat turns up in the kitchen I either get up really early and make dinner or I cook and concoct the night before. This would be a great recipe for party or to serve as a main dish.


 Chicken Caesar Pasta Salad Ingredients:
1 Yellow Bell Pepper Julienne cut
½ Orange Bell Pepper Julienne cut
1 ½ Cups Broccoli in small pieces blanched
2 green onions chopped
2 cups chicken shredded
6 cups gluten free pasta cooked about 1 box
1 Jar of Ken's Caesar dressing
1 cup shredded Parmesan cheese
(Save 1/4 cup for garnish)
Equipment
1 Extra Large bowl
1 Large Bowl
1 (2 Cup) Measuring Cup

Tip of the day: Your fridge/freezer work better when full, so spend the week stocking up on fresh groceries and your evenings at home.

Cook Pasta to package directions.








Take Bell Peppers(both Orange and Yellow) and Julianne cut, Broccoli, green onions and toss in bowl. Next add Shredded Chicken.







 Cooked Pasta, and 3/4 cup Parmesan cheese and toss all together with Salad dressing. Place in beautiful bowl then serve.  Garnish with a sprinkle of cheese.

#GlutenFree Rice Crispy Treat Brownies

The other day Miss J requested a special dish. She had been envisioning in her head for quite some time and she requested that we figure out a way to make it. So the two of us went into the kitchen and did just that and Gluten Free Rice Crispy Treat Brownies were created. I hope you enjoy these as much as we did and take them to your next tailgating event like we did. 

Gluten Free Rice Crispy Brownies Ingredients:

½ cup butter
1/4 cup cocoa 
1/8 cup aged Balsamic Vinegar
1 cup brown sugar
1 teaspoon Vanilla Bourbon
3 eggs total ( 2 for chocolate mixture 1 for cheese mixture)
1/4 cup corn starch
3/4 cup Oat flour
1 cup semi sweet chocolate chips
1 cup granulated sugar
4 cups Mini Marshmello's
4 cups Rice Crispy's Gluten Free
1/4 cup butter
Cooking Spray

Equipment:
1 Pot
1 9 x9 (baking pan)

Preheat oven to 350 degrees



In a non stick pot melt butter then add cocoa powder and whisk together.
Next add sugar
Add  Balsamic Vinegar
Add Vanilla.
Take 2 eggs and whisk in a separate bowl add about 2 tablespoons chocolate mixture to temper then add back to chocolate mixture.

Next add Corn Starch and Oats.

Spray a 9x13" pan with cooking spray then pour in pan .
Next add about a cup of chocolate chips on top and bake for about 20 to 25 minutes.

Wait about 10 minutes then start next step of rice crispy treats. by melting butter and adding marshmellos then gluten free rice crispies.

Next pour on top of brownies.

Then squish down with parchment paper that has been sprayed with cooking spray.


Last garnish with melted chocolate (optional).

A #GlutenFree Breakfast Sandwich for #SundaySupper the perfect way to start your tailgaiting party

So when I go tailgating if its an afternoon game it always includes a breakfast sandwich. So when I received my fabulous 5 pound box of Meyers Elgin Sausage. I immediately thought this would be a great start to the tailgating season. This week we for #SundaySupper we will be showcasing recipes with tailgating in mind.  I hope you enjoy them as much as I do and don't forget to check out the other #SundaySupper's entries.

FYI...I assemble  these Sandwiches at home and reheat them on the grill when I get to the stadium.

Makes 5 Sandwiches

Breakfast Sandwich Ingredients:
5 Garlic Meyers Sausage 1 pound
10 Pieces of Gluten Free Bread
8 pieces of Bacon
5 Eggs
2 Avocados
Cheese optional

Equipment
Aluminum foil
knife
frying pan for making bacon and eggs

Preheat oven to 350 degrees

Take 1 pound of sausage and bake in oven for 45 minutes on sprayed cookie sheet

Take Eight Pieces of Bacon and cut in half so you have 16 Cook Bacon until Crisp

Toast Gluten Free Bread
Fry Eggs

Cut Cooked Sausage in 3 pieces Horizontally

Place on toasted Bread

Next add Fried Egg

Then Bacon Horizontally

Avocados vertically then cheese if you like.


Wrap in foil then heat on the grill once you get to the stadium.

#Glutenfree Pulled Pork or Chicken Sandwiches with Meyer's Texas #BBQ Sauce

So as you know I have a giveaway that I can't help myself from talking about! It's currently going on with Meyer's Smoke House and entry is a must for this giveaway is a BBQ feast extravaganza  from Meyer's Smoke House .  So as you know I showed a recipe on  Tuesday for A Pork Roast made with Meyer's Smoke House Texas Dry Rub. This is a great meal that keeps on giving, however if you don't have time to make a roast like I did this simple recipe for pulled pork sandwiches could also be made with any left over pork chops, roast. Or if you are not a fan of pork you could shred up some cooked chicken .


Pulled Pork or Chicken Sandwiches with Meyer's Texas #BBQ Sauce Ingredients
1 Jar of Meyer's Honey Mesquite BBQ Sauce
2 Cups of Shredded Pork ( If your not a fan of Pork you could use Chicken)
Butter
Gluten Free Udi's Hot Dog buns

Shred Chicken or Pork

Add To Crock pot with Meyers Honey Mesquite Sauce.

Next Cook for 2 hours on low in a Crock Pot.

When ready to serve butters buns.


Then grill in frying pan.

Place cooked BBQ in grilled bun.

#GlutenFree Penne hot salad with basil, asparagus, cherry tomatoes fresh mozzarella and chicken with a mustard vineagarete for #SundaySupper


So I love a great Salad that you can either serve hot or cold and after I received a case of  tomatoes;  I knew exactly what I would make for #SundaySupper.  A salad that reminded me of Summer in a bowl but with a twist of Italy.

Ingredients for Penne hot salad with basil, asparagus, cherry tomatoes fresh mozzarella and chicken with a mustard vinaigrette:

1 Bag of cooked Penne Gluten free of course I used Trader Joe's Brown Rice Penne
1 cup of sliced  in half cherry tomatoes
2 cups slightly cooked asparagus
1/2 cup basil sliced and or chopped
2 cups of fresh Mozzarella cubed
2 cups chicken from either left overs or a rotisarie chicken



Summer in a Bowl Dressing:
3 Tablespoon Brown Gulden's Mustard
1/4 cup Aged Balsamic Vinegar
2 Large cloves of garlic grated on planer to make paste
1/4 teaspoon Salt
1/4 teaspoon Pepper
1/4 teaspoon sugar
½ cup of Extra Virgin Olive Oil

Cook Pasta according to directions I like to boil 7 minutes string constantly then let sit for 3 on murky water then rinse in hot water.

Cut asparagus and put in pan cover with water until it boils than immediately pour cold water over so it stops cooking. I like to put mine in a colander then run under water until cold to the touch.

In a measuring cup mix first 6 ingredients together than whisk in olive oil so it emulsifies

Slice tomatoes, mozzarella, basil  and chicken and place in bowl


Next add cooled a asparagus

then pasta and toss with mustard vinaigrette.

Let vinaigrette sit  and soak up pasta for about 5 to 10 minutes then serve.


Also don't forget tonight is Sunday and what does that mean it's time to gather around the #Sunday Supper table.
