Gluten Free Southern Pickle Dip



Gluten Free Southern Pickle Dip is so yummy and tasty, I like to eat mine with carrots and Potato chips; rotating back and forth. I love the taste of dill pickles, I like them fried and coated, I like them by them selves and I also like them in my dip. The other day I went to a get together at one of my friends houses and she was talking about this home made dill pickle relish that her grandma used to make and then she said she made a dip with it too. I asked her if she had the recipe but unfortunately she said when gran died it went with her. I hate to hear that, but at the same time, it makes me want to recreate for her. So I asked her a couple key questions then started my shopping list in my head. Then as soon as I got home I started to recreate the dip.  I recreated the dip with a few store bought items plus a couple items that I picked up on the way home. I finally got it perfected last week. I can't wait to share it with you and my friends at my next back yard BBQ. 

Gluten Free Southern Pickle Dip Ingredients:
1 cup of cream cheese
1/2 cup of mayonnaise
1 cup of sour cream
1 tablespoon of dill weed
1 cup of dill pickle relish (Gourmet Kosher style)
1 cup of chopped chives (half for garnish) 
salt and pepper after refrigerated if need be


In a food processor with the sharp blade in place all ingredients in the bowl except 1/2 of the chives. 


Next turn on Food processor and turn on until fully blended.


Place in refrigerator for 2 hours so for flavors to blend together garnish with chives just before serving and add salt and pepper if needed.

I serve with both fresh vegetables and ruffled potato chips.

Gluten Free Caramelized Balsamic Onion Dip


 

I love summer! Going to back yard BBQ's, sitting around with friends having drinks and appetizers while watching the kids swim. I love a go to easy dip that I can serve and if their are any leftovers the next day. I try to make something healthy with my Gluten Free Caramelized Balsamic Onion Dip, I like to always put a little out at a time. I hate for food to sit outside on a hot day to long. so when I serve my dip after I make it. I break out in 3 equal size bowls. Two go in the refrigerator one goes out with the chips. Then on a as needed basis I bring a new bowl out and refresh the chips. The next day I made this baked potato in the oven then added a little of my leftover dip that was never put out on my baked potato with a little bacon.  

Serve with Potato chips or on a baked potato you decide 

Gluten Free Caramelized Balsamic Onion Dip Ingredients:
1 large onion chopped
2 tablespoons butter
3 tablespoons balsamic vinegar aged
2 cups sour cream 
Sprinkle with Bacon (optional)
Potato Chips or Baked Potato 



Equipment
1 frying pan
1 wooden spoon.
1 blender

In a frying pan caramelize onion with butter.

Next add balsamic vinegar

Place caramelized onions in blender with 1 cup sour cream.

When well blended take last half of sour cream and fold in.

Separate out in 2 to 3 bowls depending on the size of your crowd.

#GlutenFree Peanut Butter & Chocolate Pretzel Snack Mix



Being Gluten Free does not mean that you need to deprive yourself. There are more and more Gluten Free items out there each and every day. However, I have noticed that there are a lot more treats ans in sweets available now than let's say 5 years ago. I feel that no mater if you are gluten sensitive, intolerant or if you have celiac disease it does not mean that it has to ruin your life. You can learn to go to peoples houses with your own snacks and treats. To be honest your host will probably welcome the idea. I let people know up front not to worry about Miss J. I will make sure she has plenty of snacks and treats and if we happen to be going for a BBQ or a Pizza party I make sure I call ahead to find out the menu. I next prepare her the same food at home so she doesn't feel left out. This way there are no cross contamination issues. 

So the other day we went to a a BBQ and the host said that she had made snack mix with Gluten Free Cereal. J was so excited. but prior to letting her have some of this snack mix I asked the host a couple of questions. What kind of pretzels are these? She said I don't know just regular old pretzels. So we decided to pass because if your host can't tell you exactly what's in it it's best to skip it. After we came home, I asked Miss J if she wanted me to make her some snack mix and yes she did. So here is my recipe for Peanut Butter & Chocolate Pretzel Snack Mix .

Gluten Free Peanut Butter & Chocolate Pretzel Snack Mix Ingredients:

1 bag of Chocolate Chips (processed in a Gluten Free Facility)
1 Cup Crunchy Peanut Butter (Gluten Free)
1 stick of butter
9 Cups of Gluten Free Cereal ( I used 3 Cups Cinnamon apple 3cups plain and 3 cups Honey Nut)
3 Cups Pretzels (Glutino Gluten Free Pretzels)
2 Cups of peanuts
1 1/2 cups of powder sugar

Equipment:

2 Sheet of Wax Paper
1 Supper Large Bowl
1 Medium Size Bowl (Microwave safe)
a pair of disposable gloves
2 cookies sheets

In a medium size add first 3 ingredients and place in microwave for 30 seconds at a time on high stiring each time 30 second is up.


It took about 3 times for mine to be creamy.




In a large bowl combined pretzels, peanuts and ceral.


Now it's time to put your gloves on but before you do that get your 2 cookie sheets out and place waz paper on each of them.

Next pour chocolate peanut butter mixture on pretzel mixture and make sure you have your gloves on and toss with hands.

After fully coated add powder sugar a little at a time while continually tossing.

After fully tossed place on cookie sheet in refrigerator for about a hour until completely set.

Makes about 12 (1) cup servings i.e. this bowl is 8 ounces.

Summer Artichokes

 
 
I was shopping yesterday at Trader Joes and I noticed they have started to carry Artichokes. I know we are almost to Spring but Summer will be here before we know it. When I think of the start of Summer my mind always goes to fresh fruits and vegetables. I really enjoy cooking what is in season and visiting my local farmers markets twice a week. I have one about a block and a half from my house on a Tuesday night plus I have another one on Sunday Mornings in the town next to ours.  The last time I went to the Farmers Market I picked up these beautiful artichokes.


Artichoke Ingredients:

2 Artichokes
2 Quarts water
1 teaspoon salt
1 teaspoon pepper
The Juice of a lemon

Mayonnaise Sauce Ingredients:

2 tablespoons mayonnaise
1 teaspoon curry powder

Equipment

2 Quart Sauce pan
Tongs for removal of artichoke
Fork to pierce
spoon to remove fiber



Take Artichokes and cut tops and bottoms off
Next go around and cut off thorns on tops of leaves.
Rinse and Clean Artichokes and Place in large pot .


Fill a Large pot with water enough to cover artichokes and turn upside down
Add juice of a lemon plus salt and pepper and cover with a lid
Boil for about 45 minutes until you pierce the bottom with a fork easily.

Next remove from water and cool upside down.  then remove center fibrous portion I like to cut the large ones in half easier to remove thorny inside
Make Hollandaise or Mayonnaise with a teaspoon of curry powder.


Serve Warm or at room temperature with Mayonnaise and curry powder or with Julia Child's famous hollandaise.

#GlutenFree 7 layer bean dip for Super Bowl #SundaySupper

So as promised my favorite recipe that we served on Super Bowl Sunday had to be my Seven layer bean dip. This is a great recipe for a quick and easy appetizer that will WOW!!! your friends and neighbors.

7 layer Bean Dip ingredients:
2 16 ounce cans of refried beans
2 cups of sour cream
1 envelope of Taco seasoning
2 cups shredded cheddar cheese
6 green onions chopped
3 Roma Tomatoes chopped
1 4 oz can sliced olives
Cilantro for garnish (optional)




Take 2 cans of beans and scoop out about 16 dollops
Spread very thin and make one thin layer of beans. Using back of spoon to spread thinly.
Next Mix Taco Seasoning and Sour Cream
Until it looks like this; again put 16 dollops of the sour cream taco seasoning mixture.
Spread again very thinly to cover all beans, using the back of the spoon.

Next Sprinkle cheese then sprinkle Green Onions
Border pan with chopped Tomatoes

Next border with olives on tomatoes


Serve immediately with tortilla chips.

Bruschetta Goat Cheese Sliders

With Super Bowl Sunday coming right around the corner I am always looking for great recipes to serve at my super bowl party and this is a old one but a great one.  I thought to my self what do I have in my freezer that I could make that had the burger feel. However, because I live in the land of La La, I try to watch what I eat. So when I am making burgers, I always try to do sliders. This way I get to eat the guilty pleasure of a burger and it is not supper big. So if I eat one slider with fries or chips I am full.


Tip Of The Day: Before going to the Market Check the sale advertisements
mine comes out On Tuesday Night at Midnight online for my local Ralph's or Vons Markets. I See what is on sale and stock up on my Meat Poultry and Fish and I freeze it. This way when you have that inspiration or are reading a recipe on my website you already have the ingredients available.

Bruschetta Goat Cheese Sliders

Makes 8-10 Sliders


Ingredients:
1 pound Ground Sirloin
½ chopped Red Onion about 1cup finely chopped
1 teaspoon garlic powder
½ teaspoon Salt
½ teaspoon pepper


Filling:

8-10 ½ teaspoons of  Bruschetta spread make sure it's gluten free
8-10 ½ teaspoons of Goat Cheese

1 Bag of Gluten Free Dinner Rolls Sliced Horizontally

Equipment:

Grill, Frying Pan or Grill Pan
Large Bowl for Mixing
Platter or Plate one for patties Cooked one for Raw patties






Mix first 6 Ingredients together in bowl. Next form16-20 thin patties, so you can meld together after placing filling on top. Next sprinkles Bruschetta and goat cheese on top of thin patty.






Then place other patty on top and squish together so you do not see the filling. Next place on grill for 3-5 min a side until desired wellness. When Cooked place on Gluten Free Roll and serve with chips

Home Made Chicken Tenders

So it's that time of year when there are only so many hours in the day, plus many events and parties to attend! So I always want to make sure that I have a go to meal for my family  or even an appetizers for people coming over. When I don’t have a lot of time to cook; this is one of my favorites, Chicken Tenders French Fries for a dinner or if  I'm making on game day I serve with a couple kind of gluten free mustard's and gluten free BBQ sauce. Such a fun and kid friendly meal for either game day or family night.



Home Made Chicken Tender Ingredients:
2 eggs
1 cup gluten free flour
1 cup Potato Chips ground up in coffee grinder
Cooking spray I like Crisco brand
8 Chicken tenders.


Take Chicken Tenders and rinse and pat dry.
Next Beat 2 eggs

Dredge in egg,
Dredge in gluten free flour,
Dredge in egg ,
Dredge in potato chips.
Spray both sides with cooking spray  then brown in frying pan until golden. Then bake on a lined cookie sheet  oven at 400 degrees for 20-25 minutes depending on size

Serve as a dinner or appetizer with gluten free honey mustard or gluten free BBQ Sauce.

Apricot Bacon Onion and Cheese Spread or Dip
This week’s Sunday Supper is all about Dishes in Five Ingredients or less and is hosted by #SundaySupper Contributor Amber from Mama’s Blissful Bites. Amber has a way of making us all smile with her amazing sense of humor. I love her blog and know you will too. Every busy mom knows how important it is to have that easy go to meal that you can whip up any time.  So tonight I am going to share my quick and easy Apricot Bacon Onion and Cheese Spread or Dip.



Apricot Bacon Onion and Cheese Dip Ingredients
1 cup Dried Apricots
4 green onions chopped
½ cup of chopped bacon
1 8 oz block of cream cheese
2 tablespoons Fig Jam or Apricot Jam

Take Dried apricots and chop in food processor until sticks together

Now add Cream Cheese, Bacon and Onions now pulse until mixed together.

Next add Jam I used Fig it’s a little sweeter.

Place in Large Baking dish

Bake in oven at 350 for 25 minutes.

This can be served with potato chips hot out of the oven or just some gluten free crackers, you decide
