Thanksgiving Pizza

On Sunday, I was driving home from a fabulous trip with my family, I was craving turkey and we had no leftovers.  So as soon as I got home, I went to the market and got a turkey and all of the trimmings. Did you know most markets, including mine,  put the Fresh Turkeys on sale a couple days after Thanksgiving. I bought a Butterball Fresh Turkey originally priced at $29.80 for $5.87. That is correct, Five Dollars and eighty-seven cents! Can you believe that? I was pleasantly surprised. 

So on Sunday night we sat down and had Gluten Free Stuffing, Mashed Potatoes, Turkey, Beet Berry Relish and some fresh carrots. On Monday I was ready for my leftovers and my vision would be complete. However my husband wanted turkey by itself So Tuesday night  I made Thanksgiving Pizza for dinner.  It was like having a Thanksgiving feast all over again but even better. Here is the recipe:


Pizza Dough 
1/4 cup Beet Beery Relish
½ cup mashed potatoes
½ cup Stuffing or dressing
1/4 cup shredded Turkey
½ cup mozzarella Cheese


Preheat oven to 450 degrees
Make your Pizza dough either Gluten free or regular pizza Dough.
Next spread your cranberry relish on top of dough.
Then thinly sprinkle your left over mashed potatoes on top of relish.
Next add the stuffing on top of the potatoes.
Then Shred some turkey and place on top
Last sprinkle shredded cheese on top of turkey pizza pie
Bake in oven for 10 to 12 minutes until golden

Tailgating w/ Homemade Pizza and Meyers Elgins Sausage Giveaway


When I go tailgating I like to bring out of the ordinary food that you would not generally bring . Like Gluten Free Pizza that I either assemble at the Stadium or Pre-assemble at home then cook in foil on the grill.
However I always make the dough ahead of time at home.




Gluten Free Pizza Dough Ingredients
2 ½ Teaspoons Dry active Yeast or 1 envelope Red Star  Active Dry Yeast
2 Tablespoons Olive Oil
1 cup warm water
2 teaspoons Sugar
2 cups potato flour or favorite gluten free flour
1/4- 1/2 cup potato flour for kneading an rolling depending on moisture in air.
Cooking Spray

Pizza Ingredients
Gluten Free Pizza Dough ( Listed above)
1 cup of your favorite Pizza sauce or marinara sauce
2 Cups of Mozzarella cheese.
Pepperoni
Meyers Elgin Sausage sliced
Olives


TIP of The Day: If you don't have any shredded Mozzarella Cheese at home and you have string cheese use that and use shred it in your food processor.

Equipment:
Stand Mixer
Dough Hook
Stand Mixer Bowl
Glass Bowl
2 Kitchen towels one for stand Mixer the other for greased glass bowl.
Rollin Pin
Large Chopping Block
1Piece of Nonstick foil or 1 Cookie Sheet
1 Grill


Take Yeast and 1 cup warm water and combine.


 
Let rest for 10 min  until creamy.



Next Place Dough hook on Mixer



After 10 minutes have passed add 2 cups flour, Olive Oil, Sugar and turn on mixer.  Cover with towel so you do not have flour all over kitchen.


Run until stiff dough forms


Spray Glass bowl with cooking spray and place dough in.

Cover with a towel or saran wrap and let rise and double in size, this takes about a half hour.  I generally place in a warm oven. I have a old Gas oven so it generally always is warm inside.


After dough  has doubled in Size.



Flour a clean surface or Chopping Block with flour and add Extra flour don t forget to flour Rolling pin before you start to roll out dough.



Roll the dough out on a flat surface then spread sauce on top of dough.


Next add toppings I sliced up some of Meyers Elgin Sausage and some Pepperoni with some black olives.


Next Add Cheese then wrap up in foil for easy transport.
Cook on nonstick  foil or on a lined cookie sheet .



Bake at 400 for 10-15  minutes in covered Barbecue Watching  making sure it does not burn

Slice up and serve to your fellow tailgaiters

Brie, Apple and Fig Pizza Petal Dessert or Appetizer


I hope your week is treating you well. Well mine is great so far and I have a fabulous post for you today that you can serve as a dessert or appetizer. Don’t forget to enter the birthday giveaway here!


Brie, Apple and Fig Pizza Petal Dessert or Appetizer
Brie
Apple
Fig Jam
Sandwich Petal



Place Sandwich Petal on Cookie Sheet
Slice Brie thinly and place on Sandwich Petal


Next Slice apple this thin



Now add fig jam on top


 Next flip apples over like this


Cook at 350 degrees for 10 minutes

Slice and Serve Immediately

The Ultimate Gluten Free Pizza


When my daughter became Gluten Free we realized that there are not  many pizza places that serve Gluten Free Pizza. When we finally found one I was in sticker shock on what they wanted for a small Pizza a whopping 32.00 and that was for a Cheese Pizza. So I quickly started to try to figure out how to make a good tasting Gluten Free Pizza Dough. After numerous attempts. I finally came up with one good Pizza dough. I had been told that no matter what you cook with, when using Gluten Free flour you must add xanthium gum! Well after numerous attempts last night I finally made the Ultimate Gluten Free Pizza Dough and guess what no Xanthium Gum. Yep you heard right, So here's the Fabulous Recipe.


Gluten Free Pizza Dough

Cook on Silpat lined cookie sheet and top with your favorite sauce cheese and topping. This Pizza had pineapple, goat cheese, mozzarella cheese, pesto, sun dried tomato paste, tomatillos and ham. I know this is a different combination but you have to remember an 8 year old made it.

Bake at 400 for 12 minutes on Convection.
