#Gluten Free Double Crunch Apple French Toast

The Other day we went out for breakfast and one of my friends had this French toast that she said was coated in a sweet cereal that had a peanut butter flavoring. It sounded awesome, It was served with fresh berries chocolate chips and bananas. I knew that I what I had to do is to recreate this great  french toast. I  knew that I had to recreate this fabulous breakfast so my family and I could enjoy this special breakfast.

Serving Size 6 pieces

#Gluten Free Double Crunch Apple French Toast Ingredients:

4 eggs
(1) 4 ounce container or apple sauce
1/4 cup of cream
1 teaspoon cinnamon
6 pieces of your favorite gluten free bread
 butter or cooking spray

Equipment 

Whisk
Large Bowl
Small Bowl
Grill or frying pan
Spatula

Directions:
Preheat grill and either spray or butter grill.
In a large bowl whisk together first, four ingredients until well blended.

In a separate bowl  pour about a cup of home made gluten free flour . Next dip bread in egg mixture then into home made gluten free flour. Then back in the egg mixture again.

Next place on preheated grill then in about 2 minutes flip over when golden and crunchy. Repeat for the other side.

Cut in half on the diagonal dust with powder sugar and serve with fresh fruit and eggs and maple glazed bacon.

Gluten Free Lemon Curd Bread Pudding





The other day my husband and I were shopping at the 99 cents only store and to my surprise they carry Gluten Free Products like Glutino's Harvest Corn Bread. I had never seen this product before and I noticed the size of the bread was a great deal larger than my regular Gluten Free Bread that I buy at $7.00 a bag. So for $0.99 I thought what the heck lets do something fun with this bread besides making toast or Sandwiches.
So I thought to my self how about a bread pudding recipe that won't break the bank. So I created this lucious lemon curd bread pudding.

Equipment
13 x 9 pan
whisk
Sauce Pan
Bowl
wooden spoon
Aluminum foil to cover.

Bread Pudding Ingredients
1 loaf of Harvest Corn Bread by Glutino
1 1/2 cups Sugar
1/2 cup Gluten Free Cornstarch
the zest of a whole lemon about 2 Tablespoon
1/2 cup lemon juice about 2 lemons
1 1/2 cups water
6 egg yolks
Butter for pan

Lemon Curd Sauce
3 egg yolks
1 cup sugar
1 teaspoon vanilla
1/2 cup water
1/2 cup milk
3 teaspoons cornstarch
1 1/2 ounces lemonchello or lemon extract

Take the bread and shred in small bite size pieces place in bowl and set aside.

In a sauce pan or frying pan whisk together sugar, cornstarch, and lemon zest.

 Next add lemon juice, water and 6 beaten egg yolks make sure you wait until lemon juice is diluted. You do not want to cook eggs in acid of lemon juice.

Now cook on the stove until slightly thickened you do not want to have to thick because it will also thicken in oven. Next pour on top of bread and mix until fully coated.

Butter a 13 x 9 pan  I used a oval because I like my bread pudding a little thicker.

Now pour into the pan and bake for 30 minutes covered at 350 degrees and 30 minutes uncovered. Now if you are making this ahead of time (A day before ) you can cook for 30 minutes covered then place in refrigerator over night . Then place in oven for another 30 minutes prior to serving like I did.

Next make the Lemon Curd sauce in a frying pan add yolks, sugar, cornstarch, vanilla and milk and whisk together.

Next add water.

Then bring to a boil adding lemonchello or lemon extract at end.

Serve with whipped cream and sauce warm

Gluten Free Spiced Vanilla French Toast with Fresh Strawberries)

I went to the cupboard, To give my poor child a breakfast: When finally there, The cupboard was not yet bare, only 7 items were there, And so the poor girl had to wait to see what her Mom could make, out of these 7 magical Ingredients.

I woke up this past Sunday Morning with the following Ingredients in my Cupboard/Refrigerator: Strawberries, Powder Sugar, Loaf of stale Gluten Free Bread, 1 egg ,Vanilla, Cream and only a 1/4 cup of milk and some spices. Plus I scrounged up some brown and serve sausage in my freezer which I happened to purchase at the 99 cents store.

So What Did I make ?
Cinnamon spiced Vanilla French Toast with Fresh Strawberries
Ingredients:
Gluten free bread of choice
1 egg
1 pint of Strawberries sliced ( For Garnish)
Powder Sugar (For Garnish)
1/2  cup Whipping Cream
1/4 Cup Milk
1 Tablespoon Vanilla
1 Teaspoon Cinnamon
1/4 teaspoon All Spice
 1 teaspoon Butter for Grill

Equipment:
1 Large Bowl
1 Whisk
A frying Pan or a grill

                                            

Heat grill and place butter on.



Take one egg crack in Large Bowl and whisk until well blended add Coffee Mate and Milk plus Cinnamon and Allspice. Whisk together until well Blended






Next Slice Bread on the diagonal this way the slices are a lot larger and I feel it looks a lot prettier too.







Take Bread and float and flip in egg mixture then fry or grill on greased pan cook on low until golden then flip. Repeat on both sides.







TIP OF THE DAY: Make sure Eggs are completely cooked through! The reason I say this is salmonella poisoning. I really want to stress that you need to make sure that your eggs are completely cooked!!! I like to put my french toast inside the oven after I cook it for 20 minutes at 250 degrees. This way my bacon or sausage is hot when I serve and my fruit is freshly cut.

 
 

When finished place on plate with French Toast and Strawberries on top I served with Sausage but you could also do Bacon if that’s what’s in the Cupboard/Refrigerator

Gluten Free Blueberry Banana Bread French Toast


I love banana bread and I love to make it just to make the house smell good. Especially when the locations agent is coming to view my home for a commercial or a feature film or even a television show. Oliver Stone refers to my house as the banana bread house. Well the last couple of weeks we have had quiet a bit of locations agents looking at my home for jobs. Well because of this I have 4 loafs in my freezer so its time to make Blueberry Banana Bread  french toast.



Blueberry Banana Bread French Toast Ingredients:

1 egg
1 loaf of Blueberry Banana Bread  Sliced
1/2 cup Vanilla Coffee Mate
1/2 Cup Milk
1 Teaspoon Cinnamon
1/4 teaspoon All Spice
1 teaspoon Butter for Griddle


Equipment:
1 Large Bowl
1 Whisk
A frying Pan or a grill





This is quick and easy and not super hard or fancy. Make Banana bread then slice in half inch slices.


Take one egg crack in Large Bowl and whisk until well blended add Coffee Mate and Milk plus Cinnamon and Allspice. Whisk together until well Blended






Next dip bread in egg mixture flipping being careful not to break. Heat frying pan or griddle add butter so will not stick .Cook until golden on low then flip.



TIP OF THE DAY: Make sure Eggs are completely cooked through! Do to salmonella being in the news I really want to stress that you need to make sure that your eggs are completely cooked!!! I like to put my french toast inside the oven after I cook it for 20 minutes at 250 degrees. This way my bacon or sausage is hot when I serve and my fruit is freshly cut.
Serve w/ Blueberries and or fresh fruit.

Runaway Raspberry Muffins

As you know Miss J has a gluten intolerance problem so no matter where we go. I always make a breakfast or snack treat to have with us on our travels. So the other day I thought that i would make some Raspberry Scones so I started to make them like the Strawberry Shortcake Gluten Free that I made for Valentines Day. I thought about all of the ingredients needed and was starting to make these fabulous muffins with Miss J and I realized a huge error had been made. we added way to much milk so I shifted my idea into muffins and we created this fabulous recipe. You see everything has a purpose and sometimes mess ups are the best! 


Runaway Raspberry Muffins Ingredients
1 1/2 cups Gluten Free Bisquick
1 1/2 cups Powdered sugar
1/3 cup cubed butter
3/4 cup milk
2 eggs
1 teaspoon vanilla
2 Tablespoons Raspberry Jam
1 cup frozen Raspberry 

Muffin Tins
Cupcake liners


Preheat the oven to 350 degrees

Sift together Bisquick, powdered sugar

and cubed butter and use either a pastry knife or hands,  and mash together until a crumble mixture form.

Next add milk, then add eggs and vanilla mix together


 Add the jam and fold in.
 Add Frozen berries
Now place papers in muffin tins then place about 1/3 cup in each tin.
 Make sure there are no air bubbles by lightly banging  on counter.
Serve warm or cold your choice.

Blueberry Banana Bread made with Home Made Oat Flour


 Since trying a variety of  products that are gluten free and sold in super markets  I have been inspired more to bake cookies, breads and all sorts of goodies. However, as I explained to you in my last post It is very expensive to bake and or buy Gluten Free Products . After having such a great success with the Oat flour I decided to  make you a great new recipe.

Now on to my Recipe for Blueberry Banana Bread made with Home Made Oat Flour.

Makes 2 large Loafs and 2 small loaves

Preheat oven to 350 degrees

Blueberry Banana Bread made with Home Made Oat Flour Ingredients
8 Bananas the older the better
2 ½ cups of Granulated Sugar
1/2  pound melted butter
4 eggs
3 teaspoons baking soda
1 cup all purpose gluten free  flour
3 cups oat flour.
2 cups frozen or fresh blueberries
Cooking spray

EquipmentCoffee Grinder
Measuring cups
2 large loaf pans.+2 small pans

Beat bananas and sugar at high speed for 3 minutes until turns into liquid.


Add eggs and vanilla and melted butter and beat again.


Last add Baking Soda, Baking powder, GF Flour and Oat Flour


Spray cooking pans with cooking spray.

Poor batter in Pan 3/4 full.


Sprinkle the top with Blueberries frozen or Fresh

Bake in oven at 350 for 1 hour.

Strawberry Shortcake Gluten Free


How was your Valentines with you loved ones, well mine was fabulous as usual. We had T-bone Steaks with fresh asparagus and creamed corn and it was all so yummy. For dessert I created this new dessert for Valentines day for my Hubby and Miss J. As I explained in my previous post about Valentines, it was the girl’s year. Let us see what the hubby does next year.

1 cup Gluten free Bisquick
½ cup powdered sugar
1/4 cup butter cubed
1/4 cup milk
2 eggs
1 teaspoon vanilla
1 package Cornaby’s Fruitiva
Pastry Sugar or granulated sugar
6 cups sliced strawberries
2 Cups Whipped cream
Granulated sugar for dusting prior to baking

1 Cookie Sheet
1 liner of silpat or parchment paper


Preheat the oven to 400 degrees

Sift together Bisquick, powdered sugar

and cubed butter and use either a pastry knife or hands,  and mash together until a crumble mixture form.

Next add milk, then add eggs and vanilla mix together

lastly folding in Fruitiva

Take an ice scream scoop and scoop out 9 shortcakes place on a cookie sheet lined with silpat or parchment paper.

Dust with Granulated sugar

Bake in 400 degree oven for 15 to 20 minutes.

Let cool.

When ready to serve slice in half horizontally,

placing whipped cream on shortcake then strawberries repeating one more time.












Serve immediately.
