Gluten Free Sweet Banana Waffles Inside and Out





Gluten Free Sweet Banana Waffles Inside and Out Ingredients
1 1/2 cups Sorghum flour
3 bananas smashed
2 eggs
1/2 teaspoon baking soda
3 teaspoon melted butter
 1/4 cup Milk
Gluten free Cooking Spray

Mash 3 Bananas add  2 eggs and stir together adding in 1/2 cup at a time of sorghum  flour &  baking soda. Mixing together slowly adding milk and melted butter.    Whisk together until blended to a somewhat thick batter.

Preheat Waffle Iron to Medium Setting.
Butter waffle iron so waffles don't stick . 
Pour 1/2 cup of batter on  waffle iron.










Wait for Waffle Iron to stop steaming and pull out serve with fresh bananas.

Raspberry Chocolate Cheesecake Brownies


Here is  a quick  recipe using  Cornaby’s Fruitiva I just love this new creation by Cornaby’s it is just enough sweetness and yumminess to brighten up any dessert. So today we have a Raspberry Chocolate Cheesecake brownie to share with you. I am sure you will love this. I know we did.

Raspberry Cheesecake brownies’ Ingredients:
½ cup butter
1/4 cup cocoa
1/8 cup aged Balsamic Vinegar
1 cup brown sugar
1 teaspoon Vanilla Bourbon
3 eggs
1/4 cup corn starch
3/4 cup Almond flour
1/4 cup All purpose Gluten free flour
1 teaspoon baking powder
2 cups cream cheese
1/2 cup powder sugar
2 cup Raspberries
2 oz package of Cornaby’s lemon Raspberry Fruitivia spread.
2 Tablespoons Ultra Gel
Cooking Spray

Equipment:
1 Pot
1 9 x13 (baking pan)
1 spatula
hand mixer
Large bowl


Preheat oven to 350 degrees

In a non stick pot melt butter then add cocoa powder and whisk together.





Next add sugar


Add  Balsamic Vinegar
 Add Vanilla.
Whisk eggs with a little chocolate mixture in a separate bowl add about 2 tablespoons chocolate mixture to temper then add back to chocolate mixture.
Next add Corn Starch and Almond flour and Gluten Free All Purpose flour  and baking powder whisk together then set aside.

In a large bowl beat Cream Cheese, Powder Sugar and Fruitiva then mix with mixer until creamy.

Next fold in Raspberries then add ultra powder gel. Folding in.


Then place on top of cooked brownie mixture, then place in refrigerator over night.

Flour less Chocolate Cake Gluten Free

So today I am teaching my daughters girlscout troop how to make flourless chocolate cake. This is a fun recipe with a lot of steps but it's so easy to make and you will impress all of your guests. I will post a couple photo's of this event later on this week. I hope you enjoy this recipe as much as we do.



Flour less Chocolate Cake Ingredients:
8 Eggs separated in two separate bowls
½ cup butter
1/3 cup sugar
1 2/3 cups of Chocolate Chips Semi Sweet
Pam Cooking Spray

Separate Eggs in two large bowls

Beat Egg Whites first until stiff peaks’ form.
Next in another bowl beat yolks and sugar until creamy and looks like melted butter.

In a third bowl melt butter in the microwave after melted add chocolate chips and stir put back in microwave for 40 seconds stir again then an additional 30 seconds. Stir until completely melted.
Next add chocolate to egg yolks, mix in a mixer for about a minute or so.
Remove the bowl from mixer and fold in half the egg whites to egg yolk chocolate mixture.

When you no longer see the whites add the other half of the egg whites.

Fold again until they look like this.

Spray 12 Ramekins with cooking spray then poor in batter 2/3 full.

Bake at 350 degrees on convection for 18-20 minutes.

Strawberry Shortcake Gluten Free


How was your Valentines with you loved ones, well mine was fabulous as usual. We had T-bone Steaks with fresh asparagus and creamed corn and it was all so yummy. For dessert I created this new dessert for Valentines day for my Hubby and Miss J. As I explained in my previous post about Valentines, it was the girl’s year. Let us see what the hubby does next year.

1 cup Gluten free Bisquick
½ cup powdered sugar
1/4 cup butter cubed
1/4 cup milk
2 eggs
1 teaspoon vanilla
1 package Cornaby’s Fruitiva
Pastry Sugar or granulated sugar
6 cups sliced strawberries
2 Cups Whipped cream
Granulated sugar for dusting prior to baking

1 Cookie Sheet
1 liner of silpat or parchment paper


Preheat the oven to 400 degrees

Sift together Bisquick, powdered sugar

and cubed butter and use either a pastry knife or hands,  and mash together until a crumble mixture form.

Next add milk, then add eggs and vanilla mix together

lastly folding in Fruitiva

Take an ice scream scoop and scoop out 9 shortcakes place on a cookie sheet lined with silpat or parchment paper.

Dust with Granulated sugar

Bake in 400 degree oven for 15 to 20 minutes.

Let cool.

When ready to serve slice in half horizontally,

placing whipped cream on shortcake then strawberries repeating one more time.












Serve immediately.

Home Made Rice Flour

Now that I realized that I can make Oat flour my next try was Rice Flour. So easy, however, I think I'm going to invest in a grinder/ mill.


Making Rice Flour


Measure Oat 1 Cup of rice


Place in coffee grinder do not place past max line.


Grind until a fine rice dust or powder appears.

Enjoy this fun activity with your little ones!!!

A Gluten Free Flour you make at home!


Have you ever gone to your cupboard and had no flour? Well I was at the market the other day looking at all of the Gluten Free Flour options and I happened to notice that when reviewing the ingredients one was made of ground oats. I then thought to myself. Why I am I paying $8.00 for a bag of flour when I have a case of gluten free old fashioned oats in my garage. So I thought to myself should I get out my food processor or better yet my coffee grinder. 


So I got out my coffee Grinder and then I thought lets try it out with a batch of cookies and yes it worked! Plus works so well no Xanthium Gum required when making cookies.


Measure Out  1 cup of  gluten free oats


Place  in grinder to maximum spot!


Do Not Fill past Max mark!


Grind and place in air tight container so no clumps form


To Substitute for regular flour use equal portions. So If the recipe calls for 2 1/4 cups flour. Use 2 1/4 cups ground oats it will work just the same and I made double chocolate mint cookie with this and it turned out just great.
