#GlutenFree Italian Style Baby Back Ribs #SundaySupper



Some of you might not know me, my name is Sheila Fretz and  I am new to the Sunday Supper Group. I focus on Gluten Free recipes that are simple and super easy but not super fancy.  This Sunday Supper, we will be cooking with the Schlossadler Family of Wine and look forward to breaking bread with you!   We are honored to be sharing a selection of fruity and dry wines from The Wine Club by Schlossadler Wines

I love a good Sunday Supper with me and my family, every Sunday when I was growing up we had to be home for Sunday night Dinner. No matter where we were my Mother took no exceptions to the rule. So when I was given this beautiful bottle of wine;  I immediately thought of our fabulous Sunday Suppers with the wine a flowing. So as soon as I opened this fragrant bottle of Pinot Noir; I knew I must make something new with it because my philosophy is if it taste fabulous your food will too. So I immediately poured a glass of wine for myself and looked in my freezer to see what I could make.and this is what I came up with.

Serves 2 to 3 (recipe may be doubled by doubling meat proportions.)

Italian Style Baby Back Ribs
1 Half Rack of Baby Back Ribs
2 teaspoons salt
2 teaspoons pepper
2 teaspoons basil
2 teaspoons Thyme
2 teaspoons Sage
2 teaspoons garlic powder
1 jar of your favorite marinara sauce
1 16 oz can of Stewed tomatoes
2 cups of Santa Barbara Pinot Noir
2 Tablespoons Olive Oil
1 Bag of Gluten Free Pasta

In a large Skillet heat up Olive Oil.On Stove and preheat oven to 300 degrees. Season meat on both sides with salt, pepper, garlic powder, basil, thyme and sage. 

Brown all sides of ribs

Add 2 cups of wine almost a half of a bottle you will have lots of steam.

Once steam vanishes and wine is boiling  pour stewed tomatoes on meat,

then marinara and place in oven for 3 hours.

Cover and place in oven for 3 hours.

About 15 minutes before you serve make gluten free pasta according to directions and serve with extra sauce.

Tip I always cook my gluten free pasta in half beef broth half water. Gives it more flavor.

Crock Pot BBQ Chicken

In my last post I spoke about quick and easy dinners on the go that you can prepare ahead of time. This is one of those easy on the go recipes that you can start either at Lunch time or before you go to work. I started this on my lunch hour then went back to work.



Crock Pot BBQ ChickenIngredients
Boneless skinless Chicken Breast can be frozen
1 16 ounce jar of Gluten free barbecue sauce 
1 1/2 cups Orange juice
Cooling Spray

Spray your crock pot with cooking spray so your chicken does not stick

Next add Barbecue Sauce and Orange juice.

Cover and Place on High for 3 hours if you want to start in the morning place on low for 6 hours.

Serve warm with Coca Cola Baked Beans and Scalloped Potatoes.

Sweet and Savory Meatballs for St. Joseph's Day


The other day I was asked by one of the Mom's at Miss J's school to join the scholarship comity I quickly asked what does this entail because as you all know I wear a lot of hats in my home and in my life. The person from my daughters school said there are two dinners per year plus a handful of other fundraisers. I quickly said yes and then asked what was the next function, and they told me it was the Feast of Saint Joseph's Dinner their annual Pasta Dinner. I knew right away that it would be a good fit and I offered to give a necklace out of a jewelry line that I used to produce. So as soon as I said yes I don't know why but I  always revert back to food and my food imagination goes wild and immediately I thought  of this great dinner that I originally had OnefabulousMoms Best Meat Balls Ever at her house  one night., she happens to be my neighbor However, I didn’t have the recipe. So I went back to my taste bud, until after I made my own recipe up from  memory and I remembered they were a sweet and savory and there was some kind of dried fruit in them. She had told me that she had originally got the recipe from the Oprah Show.  I wanted to make it my own so I went to the drawing board and this is what I ended up with. If your looking for a fabulous meatball recipe I believe this is where its at.








Makes 15 to 20 Meatballs depending on Size.




Sweet and Savory Meatballs:
1 package Italian sausage (mild or spicy depending what you like! remove casings
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cumin seed
1 teaspoon chili powder
3/4 cup chopped dates
1 cup grated Parmesan/Romano cheese
3/4 cup Glutino bread crumbs you can use regular bread crumbs too but I like these because my little one is Gluten Free.
2 teaspoons Dried Basil
3 tablespoon Olive Oil
1 Jar of your favorite Jarred Marinara Sauce
Cooking Spray

Equipment Needed:
1 Frying Pan
1 set of tongs
Paper towels to drain on
1 Plate to place Paper towels on
1 crock pot
wooden spoon to rest oil
Combine in a bowl all ingredients and mash together until fully .


Preheat Olive Oil in a Frying Pan.

Tip of the day: To test and see if oil is ready place the end of a wooden spoon in oil if you get bubbles its ready.


Next use a Mellon Baller or cookie scoop about the size of a Ping Pong Ball and scoop Meatballs then roll in your hand until ball forms. You will need to do these meatballs in batches so as soon as you are done making all balls . Slowly brown. You are only going to brown.

Do not overcook because you will be cooking in Slow Cooker after you brown in that Jarred Marinara sauce.  After you have browned all Meatballs drain on paper towel.Next spray crock pot with Cooking spray. Then poor Jarred Marinara sauce in Crock pot place on high and carefully place in Marinara Sauce.

Flip after an hour Cook on high for 2 hours. Or on low for 4 hours. Serve Over your favorite Pasta.

Root Beer Honey Ribs ala Crock pot.



Well this week has started off a little crazy. My Little Miss J has the flu plus we have 98 boxes of girl scout cookies to deliver either via car, wagon or USPS. In addition to I have a winner to announce for my Coach's Oat's Giveaway. Which is Fncycwgrl on twitter, She wrote on my blog that she too would make oat meal cookies to course! They are my favorite!

So if you are like me you don’t want to worry about making dinner too! So It’s time to either get the Slow Cooker out or figure something else out. Well you know me I’m not going to let my family down so we got the Slow Cooker out.

Serves 3 to 4


Root Beer Ribs Ala Slow Cooker Iingredient's:
½  Rack of Ribs cut in half
3 Yams peeled and sliced into 4 to 5 pieces
1 cup of Carrots peeled. I used Mini peeled
1 12 0z Root Beer
1 Jar of your favorite Gluten free Honey BBQ Sauce.

Place the Ribs and Yams Plus Carrots in the Slow Cooker.

Next add the BBQ Sauce on top of meat and One 12 oz Root beer I used Virgil’s
Cook in Slow Cooker for 4 and ½ hours on high.


Just before you are ready to serve drain the liquid off the meat and Vegetables and reduce until it comes back to this consistency.

Serve on a bed of Mr. Fix It's Mashed Potatoes with the Vegetables and Ribs.

Pork Chops on A Bed of Mushroom Rice Served with a Creamy Mushroom Sauce.


Today I am very late in posting my recipe. However, it is very much worth the wait. Yesterday, we had a Harry Potter Birthday party to go to for one of Miss J’s classmates and long time friends. So before we left, I quickly assembled and developed this fabulous recipe. I love using my slow cooker especially when I am going out for the afternoon. So here’s my quick and easy recipe for Pork Chops on A Bed of Mushroom Rice Served with a Creamy Mushroom Sauce.

This recipe can be also made with boneless skinless chicken breast too, however, Hubs likes it this way.

Serves 4 to 6 people


Pork Chops on A Bed of Mushroom Rice Served with a Creamy Mushroom Sauce Ingredients:

Cooking Spray
1 ½ cups Long Grain Rice
3 cups Mushroom Broth
2 Can Cream of Mushroom soup Gluten free a lot of brands have modified food starch so please read label always.
½ cup milk
6 thin sliced pork chops or 3 thick cut sliced in half
2 Tablespoons Extra Virgin Olive Oil.
Salt and Pepper to taste.

When I went to buy my Pork Chops they only Had thick cut boneless pork chops so I cut in half
Take 6 thinly sliced pork chops and Salt and pepper.

Next put 2 Tablespoons Extra Virgin Olive Oil in frying pan and heat.

Tip of The Day: to make sure oil is ready place bottom of wooden spoon in oil if you see bubbles oil is ready.
Next place meat in pan and brown on both sides.


Spray Slow Cooker insert with cooking spray next add rice


After that poor Mushroom broth over rice.


Next place browned Pork Chops on rice broth combination.


Take ½ cup of Milk and two cans of Cream of mushroom soup and whisk together in a separate bowl or measuring cup. Pour over Pork chop mixture. Place on High and cook for 4 hours.

Dig deep when serving and make sure you get all 3 layers.

Mrs. Mix Its Famous Pot Roast Inspired by the Liberty Tree Tavern at Walt Disney World


Since this weeks link up for Tuesday Night Supper Club is Travel. I thought I would share with you my famous pot roast. This pot roast is inspired by my many travels to Walt Disney World and every time we go to the Magic Kingdom, I always make a priority seating reservation at Liberty Tree Tavern. This is always a fabulous stop for lunch or dinner.  When we go to Liberty Tree Tavern, we always order at least 1 order of pot roast, one of the best pot roasts I have ever had!



This is the easiest recipe I will probably ever give you. When ever I make it everyone wants the recipe and that’s because you can make it before you go to work in the crock pot or you can bake it in the oven while you are gone.

Mrs. Mix Its Famous Pot Roast Ingredients:
1 Pot Roast 
2 T. Olive Oil
Salt Pepper to taste
Garlic Powder
2 cups Red Wine. 
12 Carrots peeled and cut into large chunks
2 16 oz  cans of peeled white potatoes 2 cups of 2 2 cups pearl onions cleaned
2 cups of peas
2 cans of stewed tomatoes
1 320z box of beef broth

In a large pan heat  oil then place seasoned pot roast in dutch oven and brown. 

Next either place in a Crock pot or Dutch oven and add 2 cups of red wine and bring to a boil. 

TIP OF THE DAY: Do not use fresh potatoes with cook time being as long at it is the canned potatoes hold up better than a fresh potatoes. If you choose to use fresh you will have a cloudy sauce at the end. I have done this before thinking it would be healthier and I had a pot of mush with my pot roast.


Carrots next, then onions on top of meat and carrots, next add peas.


Add 2 cans of stewed tomatoes and last the whole box of beef broth. Cook in oven at 350 for 2 hours covered or cook in crock pot on high for 6 hours covered.
