Mr. Mix It's Famous Mashed Potatoes

I am so fortunate I have a fabulous husband who loves to design, build and fix things, on top of all of that he loves to help me in the kitchen. So after a hard days work we try to split up the dinner.  This way it gets done a lot quicker and we can eat faster. We have been married now almost 14 years and only 9 if you count the way the State of California does. But that's a whole different story, which I will share  with you another day. So here is the second half to Baked Salmon Balsamic Glaze you will see Mr. Fix It's Mashed Potatoes under the Salmon  in the center of the wreath.

Mr. Fix it’s Famous Mashed Potatoes Ingredients:
3 lbs Yukon Gold Potatoes Cut in cubes for quicker cooking
1/4 pound of butter (1 stick)
1/4 cup milk
½ cup sour cream
 
Equipment:
Potato Masher
1 Large Pan

Peel and Chop potatoes for mashed potatoes boil potatoes around 20 min until soft to the piercing.







When soft for mashing drain and add butter, milk, and Sour Cream then Mash until creamy .

Gingerbread Decorating Party from 2011

So last year we celebrated Miss J's birthday with a Gingerbread decorating party and she loved it so much that this year we will also have a Gingerbread Decorating Party however it will be with a twist. This year they are making Gingerbread houses that fell on top of  The Wicked Witch from the West in a Wizard of Oz theme.  So I thought I would post last years party for the girls who are attending to get ideas. I hope you enjoy this as much as we will.
 

 We Started by decorating our house with all the trimmings.

Next we set the tables.


Then the girls slowly arrived, Put on there party favor aprons and hats. Miss J was a Santa  and Her B.F.F. was an Elf

We had so much fun and here's the beginning of it all.


  We ate a yummy lunch,  then we started decorating.

                                                                                                 
Fun was had by all!


All the houses were fabulous 


 Especially this one and it wasn't even my daughters it was just Hershey Chocolate Love.


Then we sang Happy Birthday


What a Fabulous Party.........

Re-stuffed Potatoes with Cheddar Cheese, Bacon, green onions


 
Since the holidays are upon us  and next Thursday, November 22, 2012 is Thanksgiving. However, we will be celebrating out of town, so this week I will have a lot of sides, available on my site. Such as Tomatoes stuffed with Stuffing, Yummy Yam Butternut Squash soup, Creamed Corn plus this recipe of Re-Stuffed Potatoes. This is one of my go to recipes that can be done a day ahead, especially during the holidays, because its easy. Depending on the size of the potato it can be used as a side dish or a main dish. I love to serve these on Thanksgiving or Christmas Eve with Prime Rib and Yorkshire Pudding, Cream Spinach and these re-stuffed potatoes. When we get closer to the Christmas holidays I will post all of these recipes. But for now here we go.


Re-stuffed Potatoes ingredients:
4 Potatoes baked large about an hour
4 slices of bacon shredded
1/4 cup green onions chopped
2 cups grated cheddar cheese
1 cup sour cream
2 Tablespoons butter





I cut top off the potatoes carefully make sure you do not rip.









Next hollow out the Potatoes and set aside. 









Place potatoes in a large bowl,(I love my Kitchen Aide Mixer so you will here me talk about it a lot), Or place in Large bowl for Kitchen Aide Mixer.  Next add Chopped Onions, Cheese, Sour Cream and Bacon and turn on mixer until thoroughly mixed.








Take potato mixture and re-stuff in skins.
Bake in Oven 15-20 min at 350 degrees

So what are you doing for Christmas Eve

So what are you doing for Christmas Eve? Here in my neighborhood Onefabulous Mom, Myself and a couple of our neighbors and friends have a annual holiday party that normally happens at neighbor Anne’s house. However, this year I am the lucky house that is hosting the party. We are very excited to be hosting.
My Hubby and I plan on serving the following:

 A Turkey roasted and stuffed with Gluten Free Stuffing,

A Spiral Cut Baked Ham plus  Beet Berry Relish,

Creamed Spinach,

Neighbor Anne is bringing her fabulous ladakh’s Potato pancake which I don’t have the recipe for yet. We will see if Anne will part with one of her 3 recipes Sweet Potato Ladakh’s, Tradional Ladakh’s (Potato Pancakes) and last but not least Seafood Ladakh’s.  Plus all the trimmings Apple Sauce and Sour cream

In addition to OneFabulous mom is bringing her Moms famous Broccoli Casserole


For dessert I will be making my famous gluten free holiday trifle 

and a Pecan Pie from Onefabulous Mom

This should be a fun night with friends and neighbors and some of the drinks will  provided by Segrams which I will be giving a you a couple recipe ideas for there newest wine coolers.

A Holiday Roast Beef

 
There are many things I love about this time of year, the decorations the food and all of the fabulous Holiday spirit. You know that there is only 54 days until Christmas! I was told that this morning at Mass. I'm like the rest of you the economy is tight and the last thing I want to think about is to go out there and shop. So this meal is great because you will get 3 different meals out of this one roast beef if you play your cards right. Which I plan to post Wednesday and Friday.

A Holiday Roast Beef
1 5-10 pound Roast Beef
5 teaspoons garlic powder
5 Tablespoons Olive Oil some for potatoes some for roast
Salt and Pepper
8 Potatoes pealed and cut
10 -15 potatoes pealed and cut
This is one of my favorite pieces of meat to buy especially during the holidays. I love to make a roast with Oven Roasted potatoes and Oven Roasted Carrots.

TIP OF THE DAY !! The easiest way to cook this is with a meat thermometer. I like the digital ones that you put in the roast prior to cooking. All Clad makes a fabulous one and there are many other company's out there that make them too.

 
Take Meat drizzle with olive oil until completely covered add Salt pepper and garlic powder until evenly coated. 


Next do the same with Potatoes and Carrots (sorry guys I forgot to take a picture of the carrots), toss until evenly coated.

 
Bake in oven covered at 325 until thermometer reads 100 degrees uncover meat and cook until it reaches 145 degrees pull out of oven and serve in 20 minutes.

Cranberry Relish






























This is one of my favorite recipes for Cranberry Relish it is not to sweet and it taste so yummy. Plus it so easy to make.


Cranberry Relish Ingredients
1 Bag of  Cranberries 16 oz
1 Cup of Fresh Squeezed Orange Juice
3/4 cup sugar
1 tsp nutmeg

Equipment
1 large pot
1 spatula Rubber for stirring

TIP OF THE DAY: Buy Cranberries when in season and freeze them; this way when you want to make anything  that calls for cranberries you have them at home.

Place Cranberries, Sugar, Nutmeg and Orange Juice in a pot and bring to a boil. Turn down to simmer and let boil and additional 10min. Place in bowl and chill overnight in refrigerator.
