Chicken Sandwich with my friend Patty's special Bacon Mayonnaise


Chicken Sandwich with my special Bacon Mayonnaise. I love to make a lot of sandwiches when its summer time because I cant stand a hot kitchen. I also take advantage of my store bought rotisserie chicken this time of year. However, My Husband loves to have Mashed potatoes and Carrots with Miss J. Because its not dinner to him unless there are at least 2 vegetables on the table. So to make that Happy Compromise I will serve a sandwich for dinner but I also will serve those two vegetables even if I am not going to eat them.

Chicken Sandwich with my friend Patty's special Bacon Mayonnaise

2 or three slices of Chicken
1 Tablespoon of Bacon Mayonnaise
2-3 slices of Tomatoes
2 tablespoons Shredded Mexican Cheese
2 slices of Bread I used Udi’s Gluten Free
 

Take bread and place on plate add chicken to one side


Next add sliced tomatoes


Then on other piece of bread add Bacon Mayonnaise


Then add cheese to the top of tomatoes


Close and cut and serve.

Bruschetta Goat Cheese Panini's




 
 
Who's ready for the Super Bowl I know I always like to build a Panini Bar with a variety of meats and cheeses and then some sliders with a couple of dips, and then have the guests bring deserts This is one of my  quick and easy, go to recipes, and you will be in and out of the kitchen in 5 min, including clean up!


TIP Of The Day: If you do not own a Panini Press Take a brick and cover with foil and place on top of sandwich. Works the same Way as a Panini Machine. In addition to you can use your George Foreman cooking Machine they are pretty much the same.

1 Sandwich
Bruschetta Goat Cheese Panini’s Ingredients:
Gluten Free French Bread  2 Slices 1/2 inch thick I make the Glutino Mix
2 Tablespoons Goat Cheese
1 Tablespoon Tomato Bruschetta
Butter (Optional)



Take Some Gluten Free French Bread and Cut ½ inch Slices













Next Take goat cheese spread on Gluten Free Bread
Last take Tomato Bruschetta and spread on top of goat cheese.
Optional Butter Outside of Gluten FreeBread
Place in Panini in Panini Machine and cook for about 1-2 min or in Frying Pan on Medium Heat for 1 min each side.

#Glutenfree Pulled Pork or Chicken Sandwiches with Meyer's Texas #BBQ Sauce

So as you know I have a giveaway that I can't help myself from talking about! It's currently going on with Meyer's Smoke House and entry is a must for this giveaway is a BBQ feast extravaganza  from Meyer's Smoke House .  So as you know I showed a recipe on  Tuesday for A Pork Roast made with Meyer's Smoke House Texas Dry Rub. This is a great meal that keeps on giving, however if you don't have time to make a roast like I did this simple recipe for pulled pork sandwiches could also be made with any left over pork chops, roast. Or if you are not a fan of pork you could shred up some cooked chicken .


Pulled Pork or Chicken Sandwiches with Meyer's Texas #BBQ Sauce Ingredients
1 Jar of Meyer's Honey Mesquite BBQ Sauce
2 Cups of Shredded Pork ( If your not a fan of Pork you could use Chicken)
Butter
Gluten Free Udi's Hot Dog buns

Shred Chicken or Pork

Add To Crock pot with Meyers Honey Mesquite Sauce.

Next Cook for 2 hours on low in a Crock Pot.

When ready to serve butters buns.


Then grill in frying pan.

Place cooked BBQ in grilled bun.

Enjoy and See you for Sunday Supper with Tailgating and I'm serving a tailgating treat from Meyer's Sausage.

Mother's Day & Disneyland Park at Jolly Holiday Bakery


So what's your plan for Mother's day? You know it's this Sunday! My plan is to go to Disneyland with my friends and family. My Mom is no longer with us, so it's all about me on this special day. Hope fully we can eat at The Joly Holiday Bakery and have a couple gluten free sandwiches like these ones. I love this new restaurant on Main Street because its fun to sit and people watch here or just watch the parade go by in the afternoon. 

Plus for dessert we will have these fabulous gluten free cookies made by OMG....
Miss J will really love to watch the Parade with her Mom.
Plus we will be able to see all of the crazy and fun characters?

A visit to the Grill Em All Truck + A inpirational recipe




So the other day I went to the Grill Em All Truck  Yes it is not gluten free however they have one fabulous burger. I love to taste other peoples creations and I have heard so much about this Food Truck. Did you know that the Grill Em All Truck Won “The Great Food Truck Race” on The Food Network.

They have a variety of Burgers From the Waste ‘Em all That has green chilies, pepper jack, beer soaked onion. Or The Molly Hatchet which is sort of like a Breakfast sandwich with seared fennel sausage gravy, bacon, maple this has the  sweet and Savory taste. Last we have the Blue Cheer which is what I ate and it was amazing.  So much so it has inspired me to build my own burger that is Gluten Free including all of there ingredients of the Blue Cheer blue cheese, cranberry gastrique, Munchos




Here is there Menu and you definitely need to try here is Grill Em All Trucks menu

Cranberry Gastrique Ingredients1 cup of fresh or frozen Cranberries
½ cup of Apple Sauce
1/4 cup brown sugar
1/8 cup balsamic vinegar
1 cup water


Burger Patties Ingredients:
1 pound ground sirloin not to exceed 15 % Fat
1 teaspoon salt
1 teaspoon pepper
1 teaspoon granulated garlic


The Inspired Blue Cheers Burger Ingredients:
3 Burger Patties Gluten Free
3 slices of Blue Cheese Make sure you check blue cheese ingredients not all blue cheeses are gluten free.
Cranberry Gastrique
3 Gluten Free Hambuger Buns




Place cranberries, Apple Sauce, Brown Sugar and Water in pan bring to a boil.


Add Balsamic Vinegar



In a large bowl mix ground sirloin, garlic,


Add salt and pepper



Divide into 3 equal portions adding a divit in middle grill on stove top grill or in frying pan.


Cook about 4 minutes per side
When cooked to your liking add cheese to top until melted. Next toast buns on grill


Assemble burger by placing burger on bun and then add cranberry gastrique.

Cinco De Mayo Open Faced Fajita Sandwich


After a long weekend of working at my daughters school fair and eating Cotton Candy, Hamburgers, Hot Dogs and lots of popcorn . I knew that it was time to make a real meal again. So I looked in the freezer and saw a Flank steak and I got really excited. With Cinco de Mayo tomorrow I thought a Mexican dish was in order. So I have created a Fajita Open faced sandwich for you and if you like you could serve them with an appetizer of my 7 layer bean dip as an appetizer and More Thyme than Dough’s Slow baked tomatoes.

Makes 4 to 6 servings

Open Faced Fajita Sandwich Ingredients:
One 2 pound Flank steak
3 teaspoons Garlic powder
3 teaspoons pepper
3 teaspoons salt.
1 large Onion sliced in ½ " slices
1 cup frozen sliced bell peppers
2 cups steamed corn
3 tablespoons Olive Oil
Sliced Bread I used Gluten free Udi's
½ cup Parmesan cheese
4 tablespoons butter.

Equipment:
Large Frying Pan or Wok
Broiler or Grill
Tongs
Spoon to stir Onions with

Heat up Broiler or Grill


Take Flank steak and wash and pat dry make sure meat is at room temp prior to cooking.
Next season with salt pepper and Garlic powder on both sides.
You can cook this on the grill or you can broil it as I have. I generally do 5 minutes per side with a 2 pound flank steak.


Next while Flank steak is cooking in a large frying pan or wok separate onions then place in pan with olive oil and sliced bell peppers.


Cook until golden



Next Toast bread either in toaster oven or Broiler or on grill then butter and sprinkle Parmesan cheese on place back in broiler, toaster oven or grill.


Serve on toast or on steamed corn. I steamed mine in microwave for 3 minutes. to the side I made it both ways you decide.

Havarti, Apple and Fig Spread Panini


 
During the holidays I like to make quick and easy recipes for my family because we are on the go a lot. So today I’m going to share my favorite Panini Recipe with you a Havarti, Apple and Fig Spread Panini. I love this sandwich because it reminds me of My Grandmothers apple pie but it is not supper sweet.

 
Havarti, Apple and Fig Spread Panini
5 thinly slices of Granny Smith apples
1 tablespoon of Dalamatia Fig Spread
2 slices of Havarti Cheese
1 piece of Gluten Free Bread


TIP OF THE DAY: This is so easy and if you do not have a fabulous Breville Panini Press Machine like me; use a Brick  wrapped in Foil placed on top of the sandwich in a frying pan it will work the samebut make sure you flip it. If you are using a Panini Press Machine no need to flip.


Preheat Panini Press  Machine to 375 degrees


 
While Panini Press machine is being preheated take a large apple and slice paper thin.

 
Next place 1 slice of Havarti cheese on half of the bread and fig spread on other half cut bread in half.

 
Add Apples then other slice of Cheese.
 
 
Place in Panini Press cook 1-2 minutes checking to see when golden brown, remove.
