Pound cake


I love this recipe for Sunday Suppers because you can make and serve by itself or with fresh fruit you decide. This recipe makes enough for one Large Tube pan or 1 bunt pan and 3 small loaf pans or 1 large loaf pan. I chose to make the bunt pan with 3 small loaf pans then I can share with my neighbors.

I love to use my Big Kitchen Aid Mixer for a cake like this.


 Serves 16- 24 depending on size of slice



Pound Cake Ingredients:
3 Sticks Margarine ( Land of Lakes available at 99 cents store)
3 Cups Sugar
6 eggs
1 cup Milk
2 teaspoons Almond Extract
3 cups Gluten Free All Purpose Flour
3 teaspoons baking powder
Baking Spray with Flour
2 Tablespoon powder sugar for garnish

Equipment:
1 Large Tube pan or 1 bunt pan and 3 small loaf pans or 1 large loaf pan


In a separate bowl sift together: Gluten Free Flour and Baking Soda


For large recipes like this I like to use my Kitchen Aide mixer: Cream together( using paddle mixing blade) Margarine, sugar,




Next add eggs in one at a time, scraping down the sides occasionally,




Add in Almond Extract, then  beat until creamy next add all of flower mixture on slow speed mix together until thoroughly blended together.




Next Spray pans with baking spray that includes flour spray all pans and preheat oven at 350 degrees. Cook bunt pan for 40 min or Large Tube pan for 60 min.

# Glutenfree Cheesecake Inspired by Victor Benes Bakery

I am  infatuated by the Cheesecake from Victor Benes.  I had to figure out how to make it myself and to be gluten free.  So Sunday, I went to Victor Benes Bakery and bought a slice and looked at it carefully. I saw there was a lemon or Orange Curd or Jelly. Then I thought to myself that's marmalade.  So Quickly figured out How to Make and assemble together.

So here is my inspiration,

and here is my creation!

Now here's how you make this fabulous and easy dessert.









Cheesecake Ingredients:
1 Cup of  Powdered Sugar
1 Cup of Gluten Free All Purpose flour
1 Stick of butter (1/2 Cup) Cubed
2 Tablespoons of Marmalade
5 eggs Separated
1/2 cup Granulated Sugar
(2) 8 oz Bricks of Cream Cheese
3 Tablespoons  Powder Sugar for Garnish

Equipment
1 Large Loaf Pan
Parchment Paper
Cooking Spray
13 x 9 Pan to place loaf Pan in water bath
1 inch of water
Saran Wrap
Stand Mixer
Spoonula

Preheat oven to 350 degrees

In a bowl take 1st 3 Ingredients Butter, Powder Sugar and Gluten Free Flour and mix together until a crumbly texture forms.

Take Parchment and cut 2 Strips to fit Loaf Pan both diagonal and Horizonally then Spray with cooking spray. Next poor crumbly mixture into loaf pan press down until firm. place in oven for 16 to 18 minutes until golden and bubbly.

While Crust is baking start filling by seperating eggs in to seperate bowls.

Whip Whites until Stif peaks form.

Next in seperate bowl add 1/2 cup granulated sugar to yolks and

beat until a buttery yellow texture forms

Next add Cream cheese and bead until semi creamy.

Buy now you will need to pull out the crust out of the oven and let cool for about 10 minutes then spread Marmalade.

Reduce oven heat to 300  degrees and place on Convection setting.

Go Back to your cream cheese mixture and  fold in the egg whites into the cream cheese mixture a 1/3 at a time.

When all eggs are folded in gently scoop cream cheese mixture into loaf pan.

Next add 1 inch of water into your 13 x 9 pan then place loaf pan in and place in oven for a hour.
Let Cool then Wrap container in Saran Wrap and place in refrigerator over night.

Next Day pull out of pan and place on plate and garnish with powdered sugar.

Flour less Chocolate Cake Gluten Free

So today I am teaching my daughters girlscout troop how to make flourless chocolate cake. This is a fun recipe with a lot of steps but it's so easy to make and you will impress all of your guests. I will post a couple photo's of this event later on this week. I hope you enjoy this recipe as much as we do.



Flour less Chocolate Cake Ingredients:
8 Eggs separated in two separate bowls
½ cup butter
1/3 cup sugar
1 2/3 cups of Chocolate Chips Semi Sweet
Pam Cooking Spray

Separate Eggs in two large bowls

Beat Egg Whites first until stiff peaks’ form.
Next in another bowl beat yolks and sugar until creamy and looks like melted butter.

In a third bowl melt butter in the microwave after melted add chocolate chips and stir put back in microwave for 40 seconds stir again then an additional 30 seconds. Stir until completely melted.
Next add chocolate to egg yolks, mix in a mixer for about a minute or so.
Remove the bowl from mixer and fold in half the egg whites to egg yolk chocolate mixture.

When you no longer see the whites add the other half of the egg whites.

Fold again until they look like this.

Spray 12 Ramekins with cooking spray then poor in batter 2/3 full.

Bake at 350 degrees on convection for 18-20 minutes.

# GlutenFree Orange Blossom Pound Cake

We have a beautiful Valencia orange juice tree in our back yard. I just love to go out to my back yard in sunny Southern California and pick oranges from my tree. Then let my mind go crazy on what I can create.  I knew it was juicing time and the oranges were perfect.

This recipe makes enough for one Large Tube pan or 1 bundt pan and 3 small loaf pans or 1 large loaf pan. I chose to make the bundt pan with 3 small loaf pans then I could share some too with my neighbors after a beautiful service. I love to use my Big Kitchen Aid Mixer for a cake like this.


Orange Blossom Pound Cake


Serves 24




Ingredients:
3 Sticks Margarine ( Land of Lakes available at 99 cents store)
3 Cups Sugar

1 cup fresh Squeezed Orange Juice
The Zest of One Orange about 2 teaspoons
3 cups All purpose Gluten Free Flour
3 teaspoons baking powder
Baking Spray I use Crisco Spray it's gluten free
2 Tablespoon powder sugar for garnish



Equipment:
1 Large Tube pan or 1 bundt pan and 3 small loaf pans or 1 large loaf pan

Double Chocolate Cheesecake


Do you like chocolate as much as I do? Well I don’t know about you however, looking and finding a quick and easy Gluten Free dessert is not as easy as it is to just whip up any other dessert. If we were not gluten free we could just go pick one up at any bakery or Market, but that's not the case. Well because its not always easy to find a gluten free dessert, my goal is to post at least Fifty desserts this year. This is dessert number two; I hope you enjoyed it as much as we did.


Double Chocolate Cheesecake with a touch of Raspberry. Ingredients
1/4 cup butter
3/4 cup all purpose gluten free flour
3/4 cup Almond Flour
1 cup Powder sugar
1 cup cocoa powder ½ cup for crust ½ cup for cheesecake
5 Eggs Separated
½ cup granulated Sugar
1 cup cocoa powder ½ cup for crust ½ cup for cheesecake
(2) 8 oz packages of cream cheese


Preheat oven to 325 degrees

In a bowl sift together 1st 5 Ingredients Powder Sugar, Almond Flour, Gluten Free Flour, ½ cup Cocoa powder

Mix together with  Butter until a crumbly texture forms.

Take Parchment and cut 2 Strips to fit Loaf Pan both diagonal and Horizontally then Spray with cooking spray. Next poor crumbly mixture into loaf pan press down until firm. place in oven for 16 to 18 minutes until golden and bubbly.

While Crust is baking start filling by separating eggs in to separate bowls..

Beat Egg whites until fluffy and set aside

Take yolks and sugar and beat until buttery mixture forms

Add in Cocoa powder

In a new bowl beat Cream Cheese until soft.

Now mix in chocolate mixture.

Last fold in egg whites

Now pull out crust cool a little then spread a little Jam on top of crust

Next gently scoop Cheesecake mixture into pan.

Bake in water bath for 1 hour Next add 1 inch of water into your 13 x 9 pan then place loaf pan in and place in oven for a hour.

Let Cool then Wrap container in Saran Wrap and place in refrigerator over night.

Next Day pull out of pan and place on plate and garnish with powdered sugar.
