Artichoke, Bell Pepper, Apple-wood Smoked Ham and Goat Cheese Egg Bake for #Sunday Supper



This week Sunday Supper was about throwing a Bridal or Baby Shower. I love to throw parties for my friends especially when it comes to celebrating a special friend whether it's a baby or bridal shower a special brunch with friends is always fun. As a matter of fact about a year ago today I was doing exactly that for my friend Dana; we had a bridal shower before she eloped. My favorite thing to do at a Brunch is to have a dessert buffet




However, this is my go to Brunch recipe it's quick and easy and when your having a lot of ladies to your home you want the quickest and easiest go to dish. So here is my  recipe for  Artichoke, Bell Pepper, Apple wood Smoked  Ham and Goat Cheese Egg Bake. This was the hit of the party and its so fast and easy to make you will want to serve it at your next brunch.  

Artichoke, Bell Pepper, Apple-Wood Smoked  Ham and Goat Cheese Egg Bake  Ingredients:
Cooking Spray
3 cups of frozen Hash Browns
2 cups of  colorful bell peppers
2 cups of  chopped marinated artichokes
1 cup of crumbled goat cheese
2 cups of Apple-Wood smoked Ham Chopped
12 eggs
1 cup sour cream

Equipment 
13" X 9" pan
Blender

Preheat oven to 350 degrees



 Spray pan with cooking spray, next add half of the frozen hash browns to pan.
 Then layer bell peppers,
Chop Marinated Artichokes  then sprinkle on top evenly.


 Next add Goat cheese and Ham.

Now in your blender add 12 eggs plus a cup of sour cream and liquify.
It will look like this.
Last layer the last half of Hash Browns and pour egg mixture over  the layered vegetables and place in preheated oven for 55 minutes at 350 degrees

Super Easy Hummus by Stephanie




As I explained in my original post on Dana's Shower my friend Stephenie brought this fabulous Hummus that she served with Pita Bread. It is so yummy and tasty and she was kind enough to share her husband Michael' s  recipe.

Super Easy and Yummy Hummus
2 16 oz cans of chickpeas or garbanzo beans
1/2 cup liquid from can of chickpeas
1/2 cup  lemon juice (depending on taste)
3 tablespoons tahini
2 - 3 cloves garlic, crushed
1 teaspoon salt
4 tablespoons olive oil
Directions:


Drain chickpeas and set aside liquid from can. Combine chickpeas (or garbanzo beans), lemon juice, tahini, garlic and salt in blender or food processor. While blending, drizzle in the olive oil then the cup of liquid from chickpeas.


Blend for 3-5 minutes on low until thoroughly mixed and smooth.


As time goes on and you make more and more of it, you will find your groove and maybe a little more lemon juice, or more garlic or olive oil. Serve with pita Bread or Pita Chips or Gluten Free Crackers so you can serve a Gluten Free Appetizer.

Hash Brown Casserole


I was lucky enough to have one of Dana's friends offer to make a side dish for me and she came up with this great gluten free recipe. The only thing that I recommend is always read the labels of the ingredients before you purchase because not all cream of mushrooms soups are gluten free nor  are all corn flakes, so read those labels. In addition I want to thank Kim for being so kind to help me with this fabulous shower I couldn't have done it with out you.

Preheat oven to 400 degrees.

Hash Brown Casserole
1/2 cup butter, melted
1 can cream of mushroom soup
1 medium container sour cream
2 lb. frozen hash browns
2 cups shredded cheddar cheese
Salt and pepper to taste
1-1/2 cups plain corn flakes, crushed

Mix all ingredients in a large bowl except for the corn flakes. Spray an 8 x 10 glass dish/pan with non-stick spray. Pour mixture into the dish/pan. Sprinkle crushed corn flakes over the top. Dot with butter. Bake at 400 degrees for 45 minutes.

My Best Friend's Bridal Shower


As some of you might know, I have been working on a Bridal shower, for my best & dearest friend for the past 60 days. I was fortunate enough to have the honor of hosting this shower plus the help of three of Dana's friends to help me in planning and cooking and baking for this shower. So this week, (Tuesday)  I am going to share My recipe for Artichoke, Bell Pepper, Apple smoked Bacon with goat cheese egg bake, Kim's recipe for Hash brown Casserole, Anne's Recipe for Watermelon Cucumber Salad and Stephenie's  recipe for home made Hummus.

However today I'm going to share my decorations and flowers which we bought at the flower mart and then purchased vases at 99 cent only store . Which my two fabulous neighbors helped me put together. All  16 of these vases of  flowers were done for less than a hundred dollars.


We had a sit down brunch for 35 people with China, Sterling and the finest crystal.


My neighbor Annie brought both a fruit plate
 and this fabulous Watermelon Cucumber Salad this Thursday.

Kim made this Gluten Free Hash Brown Casserole with a corn flake topping, which I will showcase Friday.

I will be showcasing this quick and easy recipe for Hummus by Stephenie next week some time.


And for dessert  we had these fabulous pastries and this gorgeous cake made by Nende who is creating a gluten free recipe as we speak..

The party was a huge success and I also want to thank Christine for going to Porto's for the potato balls, cheese rolls and all of the fabulous Champagne.

2 Egg Gluten Free Omelet


I am always thinking of new ideas to serve Miss J for breakfast. There are not a lot of gluten free options in the morning before school that don't take to long. So lately her new favorite option is a 2 egg gluten free omelet with cheese and Bacon. Most people don't realize how quick and easy it is to make a omelet. So I am going to show you today.

Ingredients:
1 dab of Butter
2 eggs
1/4 Cup of Shredded Cheese of choice
2 Slices of Bacon
1/2 avocado
Salt and Pepper to taste

Equipment: 
Non Stick Omelet pan 
Spatula

While whisking eggs melt butter in non stick frying pan then move butter around until evenly coated.

Take eggs poke with fork and whisk until fluffy

When butter in melted pour egg mixture in pan moving edges of eggs

 in until eggs are firm then flip

Next add toppings.


Fold over and serve. 


Serve with Ranch, Sour Cream or Ketchup, you decide
