Gluten Free Apple Pie

We recently found out that my daughter cannot eat "Gluten" no wheat in her diet! However, My Husband and I are still eating Gluten so I am having to cook twice for dinner or eat what Miss J is eating. So Thanksgiving came and Miss J really loves Pies and Tarts so this year I made her Mrs. Mix Its Gluten Free Pie or Tart Dough and I also made her favorite Apple Pie.

Gluten Free Apple Pie Ingredients
3 Large Lady Smith Apples sliced ( Pink in Color)
3 Granny Smith Apples sliced
6 teaspoon’s tapioca pudding 1/4 in each small tart sprinkled at bottom
1 cup sugar
1 tablespoon cinnamon
1/4 cup for sealing pie crust together.

Take apples peel and chop in small pieces add sugar and Cinnamon and toss.

Make Mrs. Mix Its home made Gluten Free Pie and Tart Crust.

Next cut in 5 inch circles I use a large mug for this.

Place the Pie crust in a Silicone cupcake pan. You can use a regular cupcake pan. However, you will take the chance of breaking the crust when removed after baking. I learned this the Hard way and broke half of my tarts, the first time I made them. If you don't have a Silicone cupcake pan use the cupcake liners for cupcakes.

Next sprinkle 1/4 teaspoons in each tart then add apple mixture and seal with fingers and milk on edges. Before I put the lid on, I vent by using a cookie cutter.
Bake in oven for 28-30 minutes until golden. At 350 degrees covered with foil for first 20 minutes uncovered for 8 to 10 minutes.
